Salt Water Taffy was originated in Atlantic City, USA. The recipe for Salt Water Taffy does not come from salt water from the ocean actually, but the ingredients do include salt, sugar, water butter, etc. After cooling the mixture down the candy is then stretched and aerated to make it softer. The candy is perceived to have received its name after a boardwalk candy shop flooded with water from the Atlantic Ocean in 1883 when the taffy was soaked in salty seawater. Reportedly, the shop owner joked with a customer that all he had was Salt Water Taffy, and since then the name has stuck.
The candy is chewy and gooey, but it is very sweet. The candy is so sweet that it sticks to the teeth. But if you are on the Boardwalk in Atlantic City, it is very likely for you to have given the candy a shot. Farlinger’s Inc. is the oldest original business on the boardwalk, and they have been making Salt Water Taffy since 1885 at the Tennessee Avenue where the company was set up centuries ago. According to Arther H. Gager, the fourth generation is following an unbroken family line to run the taffy business.
Taffy was traditionally cooked over an open fire, cooled on marble slabs, thrown onto large wall-mounted hooks and repeatedly pulled, much like gymnasium pull weights. The pulling aerated the taffy, making it soft and pliable, but not sticky. In earlier times taffy pulling, obviously on a small scale, was a family amusement. By the 1880s, pulled taffy was being rolled on marble, cut to size with scissors and wrapped in wax paper. The wrapping paper was characteristically twisted at both ends.
